Vegan Chickpea Curry

Ingredients:

  • 1 can chickpeas, drained and rinsed

  • 2 garlic cloves, minced
  • 1 tablespoon curry powder
  • 1 can coconut milk
  • 2 cups spinach

Vegan Quinoa Salad

Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 bell pepper, diced
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup parsley, chopped
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions:

  1. In a pot, combine quinoa and water. Bring to a boil, then reduce heat and simmer for 15 minutes.
  2. Fluff quinoa with a fork and let it cool.
  3. In a large bowl, combine cooled quinoa, bell pepper, cucumber, tomatoes, and parsley.
  4. Drizzle with lemon juice and season with salt and pepper. Mix well.
  5. Serve chilled or at room temperature.

Vegan Chocolate Mousse

Ingredients:

  • 1 ripe avocado
  • 1/4 cup cocoa powder
  • 1/4 cup maple syrup
  • 1 tablespoon vanilla extract
  • A pinch of salt

Instructions:

  1. In a blender, combine avocado, cocoa powder, maple syrup, vanilla extract, and salt.
  2. Blend until smooth and creamy.
  3. Transfer to serving dishes and chill for at least 30 minutes.
